Pepper Big Jim

Pepper Big Jim is the famous New Mexico roasting chilli, producing exceptionally long, broad pods that mature from glossy green to rich red. With a mild and sometimes variable heat of about 500–2,500 Scoville Heat Units, the thick-walled fruits are ideal for roasting, grilling, stuffing, relishes and classic green-chilli dishes. Productive upright plants perform best with plenty of warmth and light, while harvesting green encourages further fruit; leave later pods to colour fully for a sweeter flavour. (MILD)
